I’m Off to Make the Cupcakes!

MMMmmm!!!!  It’s that time!  My sweet husband, Anthony, has even agreed to help me!  We are going to start the cupcakes now – I’ll be posting pics as we go, so be sure to check back!  Here’s the recipe to whet your appetite… 

Black Bottom Cupcakes

Preheat oven to 350 degrees.

*You will need cupcake liners*


2 T. flour
1 – 8oz. box cream cheese
1 – 12 oz. bag of chocolate chips (minis are real good for this recipe, but I’m using reg)
1 1/3 c. sugar (I’m using Splenda)
1 egg

Cake Batter:
2/3 c. oil
3 c. flour
2 c. sugar
1/2 c. cocoa
2 tsp. vanilla
2 tsp. baking soda
2 tsp vinegar
2 c water

(Recipe can be made two ways – cupcakes or a cake.  It’s great either way!)

For cupcakes:
Mix filling and set aside.

Put cupcake liners in a muffin pan.

Mix all cake batter ingredients.

Fill cupcake liners 1/2 way full.
 half-ful (ok…mine are more like 3/4 full) 

Drop one teaspoon of filling into the center of each cupcake.

For a cake:
Mix filling and set aside.  Mix cake batter and pour into a greased 13x9x2 inch pan.  Drop spoonfulls of filling into cake, every few inches and then drag a knife through in a swirling pattern (to make it pretty!)

Note:  Be careful at this stage…these cupcakes are really good!  You will have to keep everyone away – even the dogs (as Bella will show)

Put in the oven.

Ok…the cupcakes are finished!  If you try the recipe, I must say that I would not recommend using Splenda or another sugar substitue.  In my humble, dessert loving opinion, REGULAR SUGAR IS MUCH BETTER and provides the best taste!

The Drum Roll Begins….

Countdown to my new favorite artist…are you getting excited?  Ohhhh!  I can’t wait!  I plan to add her blog to my links list (want to do it now, but then that would spoil the surprise) and will be posting pictures and more.  She is seriously so very talented and I’m in love with her work!  The big reveal will be tomorrow! 

Forgot Some Chat Room Friends

So, as I was going to sleep, I realized I had forgotten to put one of my new friends in my blog, who I’m going to have make me a purse.  Because I forgot her, I’m going to say a little more.  Her screen name is MissKnits.  She is in her sixth month of business on Etsy and so far, it looks like she is doing pretty well – she has 100% positive feedback and a rating of 199.  Of that rating of 199, 82 ratings are from sales.  She makes a variety of things, including scarves, purses, dolls, pocket books, card holders, jewelry and more!  Much like many crafters, she’s a “Jane of All Trades.”  I saw a bag on her site and I’m in love with green lately, so it immediately spoke to me.  It wasn’t exactly what I would want, so in talking with her, she has agreed to make me a custom design.  Yay!  Here are some of her things.  Check out her shop!


My husband’s website…

I don’t know if anybody out there, who reads my blog, is into or knows anyone who is into Mixed Martial Arts, but my husband recently started a company with one of his best friends, “Chuck.”  They are an affiliate of a company in Canada, called Red Dragon Fight Company.  If you are familiar with fighters, Mauricio Shogun Rua, Murilo Ninja Rua or Fabricio Werdum, Red Dragon sponsors them.
